Vinification
Although TRINUM is the new label for Cascina Giovinale, it is the descendant of an old and very popular Piemontese tradition, of combining differen types of grapes, so called Uvaggi.
Three different grapes, from the production of Cascina Giovinale, with complementary peculiarities, have been chosen to obtain a more complex and tasty wine.
We shouldn't forget that Ancient Latin used to say "OMNE TRINUM EST PERFECTUM".
After distinct vinifications and malolactic fermentation the three wines are combined and then aged in small barriques for one year.
Fermentation time and temperature depend on the quality of grapes and theirs harvesting.
Tasting notes
Ruby red with purple hues.
Intense nose, spicy lightly toasty with coffee and cacao.
Warm on the palate, full-bodied taste.
Food Pairings
Recommended with game, roast and important mature cheeses.
